Do you like broccoli and cabbage as much as I do?


Ever since I was a little kid, I’ve liked the wholesome, grassy taste of both broccoli and cabbage. Coming from a traditional Chinese family that often ate traditional Chinese dinners, broccoli and cabbage were widely-used vegetables in our dinners.

So glad to create today’s clean eating recipe of broccoli-cabbage stir fry.


This was a side dish, and it provided just the right amount of vegetables. We had ours with chicken and rice, but of course, you can also eat it alone.


I loved the combination of vegetables and oyster sauce. What I love more, though, is how absolutely clean this is.

Ingredients:

– 1 cup of broccoli – florets only

– 1 cup of shredded cabbage

– 1 table spoon of extra virgin olive oil

– 1 pinch of sea salt

– 1 pinch of pepper powder

– 1 table spoon of all natural vegetable or mushroom oyster sauce

– 1 tea spoon of all-natural lite soy sauce

– 1 tea spoon of garlic, minced


Directions:

1. Black broccoli and cabbage. Set aside.

2. Heat wok on high. Add oil.

3. When oil is heated, add garlic. Let cook for 1/2 minute.

4. Add vegetables.

5. Stir for 20 seconds.

6. Turn heat down to medium. Add sea salt, pepper powder, oyster sauce and soy sauce.

7. Stir for 1 minute.

8. Turn heat on high.

9. Let cook for 5 minutes. Stir often (about every 20 seconds or so).

10. Done. Serve and enjoy.

Today’s clean eating dessert was absolutely scrumptious!


Don’t know about you, but I’m a huge fan of bananas. Not only are they tasty, they’re healthy too. With an abundant amount of potassium, magnesium, vitamins, fiber, and other nutritional values, bananas make the perfect fuss-free clean eating snack. Whenever I’m in a hurry, I’ll grab a banana to go.


Today’s Clean Eating Dessert was fuss-free as well.


It took less than 20 minutes, and was sweet and tasty. I enjoyed the natural sweetness of real maple syrup, the soft texture of browned banana slices, and crunchiness of pecans.


Also, there was a hint of coconut in this recipe, which made a nice addition.


I hope you enjoyed this recipe as much as I did. And yes, I highly recommend it.

Clean Eating Dessert Recipe – Maple Pecan Bananas (makes 2)

Ingredients (sauce):


– 1/3 cup of real maple syrup (RAW Foods Organic Maple Syrup is just fantastic!)


– 1 table spoon of butter


– 1/4 cup of organic coconut milk (I recommend Nature Value Organic Coconut Milk, with no preservatives or stabilizer, and are packed in cans with PBA-free lining.)


– 3 table spoons of organic raw pecans


Ingredients (bananas):


– 1 table spoon of organic coconut oil (Trader Joe’s Organic Coconut Oil has always been my top choice.)


– 2-3 ripe organic bananas, peeled, cut into halves, then sliced in half length-wise


Directions:


1. Heat sauce pan over medium heat. Add maple syrup, butter, coconut milk and pecans. Bring to a boil.


2. Now reduce heat to medium-low, and let simmer until sauce thickens. (Takes about 10 minutes.)


3. Meanwhile, heat frying pan over medium-high heat. Add coconut oil.


4. Lay banana slices in pan, and brown both sides.


5. Lay banana slices on a plate, and pour sauce over each slice.

  • 1/2 frozen banana, chopped
  • 1/2 cup of strawberry frozen Greek yogurt (or any berry flavored frozen Greek yogurt)

Instructions


  1. Add everything into a blender, and blend til' smooth.

Notes


If you want your smoothie to have the best consistency, get a Vitamix blender, specifically the Vitamix 6300. It has 3 pre-programmed settings, including one for smoothies. You turn it on, and are hands-off through the entire process. The blender will blend according to program, and result is truly wonderful. I've had my Vitamix for a while, and it's one of the BEST kitchen appliances I've ever bought.

Berries are the sweetest in the summer–and who can resist the refreshing sweetness of raspberries and strawberries during this time of the year?

Hi everyone. Welcome back to Best Clean Eating Recipes!


Isn’t it ironic that the easiest recipes are usually the best? Today’s Chives and Feta Scrambled Eggs is no exception. It was simple, quick and healthy; but most of all, it was tasty.


One of my favorite herbs is chives.


Its grassy and slightly sweet flavor agrees with my taste.


Growing up in China, our family ate chives every other day, because it’s used heavily in Chinese cooking. In the United States, though, there aren’t many chive-heavy recipes to my knowledge, except for recipes with eggs. Regardless, chives are still a nice herb to use, especially because of its abundant health values. According to Medical News Today, chives have been proven to reduce the risk of prostate and stomach cancer. Also, it elevates mood.


If you don’t use chives often, today’s clean eating breakfast is a good opportunity to start.


Believe me, it was soft and tasty, and a fantastic way to start the day.

3. When butter melts, reduce heat to med-high.

– Organic cereal (I used Manna Mills 8-Grain, but Earth’s Best Organic Whole Grain Cereal is also a good choice.)


– 1 table spoon of real maple syrup (try Amazon #1 Bestseller Coombs Family Farms 100% Pure Organic Maple Syrup)


– 1/2 table spoon of raisins


– 1/4 cup of toasted walnuts


Directions:


1. Cook cereal according to directions from box.

I first wrote about this almond butter fudge in my post on Why I Gave Up Running.


A lot has changed in the almost-three years since I first mentioned the recipe—I’ve moved to a new state, made new friends, started and ended relationships, published a cookbook…


And yet, after all these years, I am still obsessed with this impossible-to-stop-eating almond butter fudge. Oftentimes, I will just mix everything up right in the almond butter jar and completely skip the step of cutting it into fudge.

The raw fudge recipe is similar to my recipe for Healthy Peanut Butter Fudge, but banana haters will be thrilled to know that THIS ONE DOES NOT CALL FOR BANANA!


Nope, no banana whatsoever.


Of course you can use peanut butter, cashew butter, Sunbutter for allergy-friendly fudge, or another nut butter if you prefer. PB&Co Dark Chocolate Dreams chocolate fudge??? Not sure how anyone could say no to that. I’ve always wanted to try pistachio butter and only wish it weren’t so expensive. I bet it would be wonderful in this recipe.


But almond butter is still my #1 favorite for this clean eating fudge recipe, perhaps due to the memories it brings back of my life in Texas when I first came up with the combination and would polish off a third of a jar each morning before anyone else had woken.

For A Chocolate Version: Chocolate Pumpkin Fudge

Instructions


*To sweeten, you can use maple syrup, agave, honey (non-vegan), stevia drops, etc. I actually really like this without any sweetener at all, and if you’re the kind of person who eats peanut butter from the jar, you might also like it unsweetened.


Be sure that you like the taste of whatever coconut oil you are using. My favorite brand is Whole Foods 365 Organic Virgin Coconut Oil; I’ve found some other brands to have a smoky flavor I’d rather not add to a dessert. To Make: Combine the almond butter and coconut oil or coconut butter, and gently warm until the nut butter is easily stir-able and the coconut oil is liquid. Stir in the sweetener if desired, then spoon into a plastic container or candy molds. Freeze a few hours until solid, and store leftovers in the freezer.

Happy First Day of April! Remember how I promised more ways to use a dehydrator? Well, I have an easy peasy homemade fruit roll up recipe that you can add to that list –> NO JOKE! Haha, see what I did there? Once that list has a few more items to it I’ll post one MASSIVE dehydrator round up because obviously I love my dehydrator and it has saved me a TON of money. How does that sound?


I’m beginning to feel like Friday’s are my DIY homemade recipe days. Last week was homemade marshmallows, this week is Kiwi Pineapple homemade Fruit Rolls up, and next week will be homemade no bake snack bites (aka healthy bites). Ya’ll, I’m on a roll and I feel so “martha-esque.”


But the truth is I like making things from scratch, just as long as they are simple. And boy are these homemade fruit rolls ups simple. All you need is a blender and a dehydrator or your oven.

The only problem is that my husband eats them way too fast. He is a fruit roll up aholic. Actually he’s a homemade dried fruit snack aholic. Like most kids are, except he’s 33 going on 10. I joking.. kinda.

I know what you are thinking. “But um.. Lindsay. I don’t have a dehydrator.” Yes, I know. NOt everyone does. But they are so worth it! I’ll get into that in another post. For now, let’s talk about how you can make these homemade fruit rolls up without a dehydrator. Yep, you can! ALthough it takes little more effort because you will need to use your oven at the lowest setting for about 6-8 hrs. Our Best Bites has a great tutorial about how to make homemade fruit roll ups in the oven, so check that out as well!

I have had the most fun day today. We bid farewell to the last of our graduation guests yesterday (sniff), then I spent the entire day today playing with cinnamon sticks.

Say what??! Trust me. I’m pretty sure you’ll want to spend a couple of hours playing with cinnamon sticks too after you read this.


Olive Nation Cinnamon Sticks

My Cinnamon Sticks came from Olive Nation. I could tell a big difference in the quality of their cinnamon sticks – so big a difference that I took a picture of them side by side. Olive Nation’s sticks are bigger, more fragrant, and just overall much, much nicer than others I’ve purchased from other sources. This doesn’t surprise me. Olive Nation products always rise above the rest. (Yet their prices are still reasonable. I love this.)


I typically think of cinnamon sticks as something to use in the fall. This led me to do a little research. What can we do with cinnamon sticks in the summertime?


THIS is the part where I become giddy. I have found so many awesome uses for these this summer! Not to mention I’ve discovered that cinnamon sticks are wonderful for our health. Cinnamon can help lower cholesterol levels, aid in pain relief, help with digestion, help us avoid bladder infections, and help regulate blood sugar levels. And that’s just the beginning.

10 Great Uses for Cinnamon Sticks - The Summer Edition

10 Ways to Use Cinnamon Sticks in the Summertime


1. Use Cinnamon Sticks as a Natural Insect Repellent.


Insects don’t like the smell of cinnamon (silly little bugs). Plus they don’t like the feel of powdered cinnamon. Grate a cinnamon stick then sprinkle it around any place (inside or outside) you’re trying to get rid of ants or other annoying bugs. You can even sprinkle it around your kids’ sandbox to keep the bugs away. Brilliant!


Want to avoid mosquitoes? Put a small citronella candle inside a jar. Tie or clue cinnamon sticks around the outside of the jar. Light the candle outside while you’re sitting around visiting and enjoying the summer weather. Insects are turned off by the smell of the cinnamon and citronella, and you can enjoy the scent plus the freedom from bugs!

2. Treat an insect bite.


Bugs already got to ya? Mix up a little bit of honey and ground cinnamon. It will alleviate pain and itching. At the same time, this honey/cinnamon combination will disinfect the area while moisturizing and healing. Amazing.


3. Make a Cinnamon Stick Flower Pot


This is not only a great way to repel bugs inside and outside – it is super adorable! Hot glue 25-30 cinnamon sticks around a flower pot. Tie a ribbon around the cinnamon sticks to complete the project. I can’t stop staring at my flower pot in all its cuteness!

4. Make Cinnamon Apple Infused Water for a refreshing detox drink on a warm day.


Or use fresh or frozen pineapple with cinnamon sticks instead. Either way, you’ll have a cool, refreshing drink that is good for your system. Simply slice one apple (any variety) into a quart jar. Add 1-3 cinnamon sticks. Fill jar with water. Allow mixture to sit for a few hours to infuse. Chill and serve.

I am so excited about this one!! After all my years of making Vanilla Extract, I’m venturing out to make other extracts – beginning with Cinnamon Extract. (Watch for other fun extract recipes soon!)


How to Make Cinnamon Extract: Place three cinnamon sticks in one cup of brandy, rum, or vodka. Store in a dark place (such as a kitchen cabinet). Shake the jar about once each day for two weeks. Voila. Merry Cinnamon Extract Christmas to the family this year. (Don’t tell them how easy and inexpensive this is.)

6. Make All Natural Cinnamon Orange Cleaning Spray.


Here’s a fresh idea for non-toxic cleaning!


Fill a quart jar about 3/4 full of distilled white vinegar. Add 3-4 cinnamon sticks and 1-2 oranges worth of orange peel. Secure lid. Store in a dark place (such as a kitchen cabinet) for two weeks, then strain out cinnamon sticks and orange peel to transfer liquid to a spray bottle. This is so simple and inexpensive!


And here’s another great cleaning option: Put a Cinnamon Stick into a cleaning bottle with attached sponge (like the purple one pictured below) for a fresh, cleaning fragrance.

7. Grate a piece of cinnamon stick into yogurt or add it to a smoothie for a refreshing summer meal or snack.


What a great way to add deliciousness to a cool treat! You can also grate cinnamon into your coffee or tea.


8. Make Cinnamon Pancake and Waffle Syrup


Yes, yes, yes. Make this. Bottle it up for gifts or enjoy it at your own breakfast table. It is super easy to make and crazy delicious.


Cinnamon Pancake and Waffle Syrup Recipe


1 1/2 cups water

3 cinnamon sticks, broken in half

1 cup sucanat


Place all ingredients in a small saucepan. Bring to a boil, then remove from heat. Cover and allow mixture to steep for 15 minutes. Remove cinnamon sticks. Store Cinnamon Pancake and Waffle Syrup in a jar in the refrigerator for up to two weeks.

9. Make Cinnamon Infused Sugar


It does not get any easier than this. I’ll be including a jar of this sugar with my Christmas gifts of Cinnamon Extract. I should also include a loaf of bread and a stick of butter – then my recipients would be set.


Cinnamon Infused Sugar Recipe


1 cinnamon stick

2 cups sugar, brown sugar, or sucanat


Put the cinnamon stick into a jar. Cover it with sugar. Secure a lid on the jar. Shake the jar once each day for two weeks. Use cinnamon infused sugar on buttered toast, in coffee, or any way you would typically use cinnamon sugar. Continue to refill the jar with sugar as the cinnamon stick will continue to flavor it for quite some time.

10. Boost your energy!


Feeling tired, lethargic, or low on energy? Pull out a cinnamon stick and give it a whiff. It’ll help you find your focus. Who knew? Easiest energy boost ever. From now on, I’ll be keeping cinnamon sticks at my desk. Hmmm…just took a whiff of one right now. Perfect.


You Can Reuse Cinnamon Sticks


Save $$. Get more than one use out of your cinnamon sticks!


To reuse your cinnamon stick, simply rinse it under hot water then allow it to dry. Run the stick over a grater a few times to release the flavor. Do this up to 5 times before discarding. Way to get a lot of bang for your buck!
